Hyssop Plant. Establish seedlings any time until early summer. Flowers grow on spikes similar to lavender.
Hyssop oil is currently used as a flavoring agent in chartreuse liquor. The woody stems are green, erect, and square like mint. Hyssop will tend to get much rangier and woodier as it grows so for a consistent supply of good quality leaves it is a good idea to replace the older plants every four years or so.
